Creamy White Wine and Cheese Sauce Salmon with Roasted Vegetables

  • Salmon fillets – skin removed
  • Sea salt – to taste
  • Black pepper – to taste
  • Broccoli – 2 heads, cut into florets
  • Zucchini – 1, cut into large pieces
  • Carrots – 3, sliced into rounds
  • Olive oil
  • Italian herbs – to taste
  • Parmesan cheese – a few tablespoons, grated
  • Garlic – a few cloves, minced
  • Onion – 1, finely chopped
  • Dry white wine – 100 ml
  • Heavy cream – 150 ml
  • Dijon mustard – 1 teaspoon
  • Parmesan cheese – 1 tablespoon, grated
  • Salt and pepper – to taste

Marinate the Salmon:

  • Season the salmon fillets with sea salt and black pepper. Let them marinate while you prepare the vegetables.

Prepare the Vegetables:

  • Preheat the oven to 200°C (400°F).
  • In a baking dish, toss broccoli, zucchini, and carrots with olive oil, salt, Italian herbs, grated Parmesan, and minced garlic until evenly coated.
  • Roast in the preheated oven for 15 minutes.

Cook the Salmon:

  • In a skillet over medium-high heat, add olive oil and sear the salmon on both sides until golden brown, about 2 minutes per side.
  • After searing, transfer the salmon to the baking dish with vegetables and return to the oven for an additional 10 minutes or until the salmon is cooked through.

Make the Fish Sauce:

  • In the same skillet used for salmon, sauté the onion until golden brown.
  • Pour in the dry white wine and allow it to reduce, cooking off the alcohol.
  • Season with salt and pepper, then add the heavy cream, Dijon mustard, and Parmesan cheese. Let the sauce simmer for 5 minutes.
  • Strain the sauce through a sieve for a smooth consistency.

Serve:

  • Plate the roasted vegetables and place a salmon fillet on top.
  • Generously drizzle the creamy white wine and cheese sauce over the salmon.
  • Serve immediately, garnished with additional herbs or Parmesan if desired.
