Solyanka Soup

Solyanka Soup

  • 500g assorted meats (beef, pork, chicken)
  • 200g smoked sausage
  • 1 large onion
  • 2-3 medium carrots
  • 3-4 large potatoes
  • 100g pitted olives
  • 1 jar pickled cucumbers
  • 1 can tomatoes in juice
  • 3 bay leaves
  • 5-6 black peppercorns
  • Salt, freshly ground black pepper, fresh herbs to taste
  • Lemon slices, sour cream for serving
  1. Broth Preparation: Begin by placing the mixed meats in a large pot, covering them with water, and bringing to a boil. Once boiling, skim off any foam, then add the bay leaves, peppercorns, and a pinch of salt. Allow simmering on a low heat for approximately 1.5-2 hours to create a rich, flavorful broth.
  2. Vegetable Prep: While the broth simmers, peel and dice the onion and carrots. In a skillet, heat a bit of oil and sauté the vegetables until they achieve a golden-brown color.
  3. Adding Sausage: Slice the sausage into bite-sized pieces and add it to the skillet with the onions and carrots. Sauté together briefly to infuse the flavors.
  4. Combine Ingredients: Once the broth is rich and aromatic, introduce the diced potatoes and cook until they are tender. Follow with the sautéed vegetables and sausage, coarsely chopped pickles, and tomatoes with their juice. Stir in the olives. Season the soup with salt and freshly ground black pepper according to taste.
  5. Final Touches: Allow the Solyanka to simmer gently for a few more minutes, enabling the amalgamation of the diverse flavors and aromas.
  6. Serving: Ladle the hot Solyanka into bowls, garnishing each with fresh herbs, a slice of lemon, and a generous spoonful of sour cream.

This refined Solyanka recipe encapsulates the essence of home-cooked warmth and culinary delight, making it a perfect dish for gathering family and friends. Enjoy this hearty, flavorful soup and let it transport you to a place of comfort and joy.
