Kvass-Based Okroshka

Kvass-Based Okroshka

  • Bread Kvass – 1.3 liters
  • Boiled Potatoes – 2 pieces
  • Ham (or boiled sausage) – 200 g
  • Cucumbers – 2 pieces (150 g)
  • Radish – 100 g
  • Boiled Eggs – 2 pieces
  • Green Onions – 30 g
  • Dill – 15 g
  • Sour Cream – 1 tbsp
  • Mustard – 1 tbsp
  • Salt – to taste
  1. Ingredient Prep:
    • Dice the potatoes, ham, cucumbers, and radish into equal-sized cubes.
    • Chop the eggs into small pieces.
    • Finely chop the green onions and dill.
  2. Mixing Components:
    • In a deep bowl, mix the diced potatoes, ham, cucumbers, radish, eggs, green onions, and dill.
  3. Making the Dressing:
    • In a small bowl, blend the sour cream and mustard until smooth. Add salt to taste.
  4. Combining All Components:
    • Add the sour cream and mustard mixture to the vegetables and meat, thoroughly mix.
    • Pour in the bread kvass and gently stir. Add more salt if needed.
  5. Chilling:
    • Place the Okroshka in the refrigerator for at least 1-2 hours to chill and infuse.
  6. Serving:
    • Serve the Okroshka chilled, allowing each person to add extra sour cream or mustard to their liking.
