Family Recipe Cheese Pancakes (Syrniki)

  • Cottage Cheese 9% fat — 700 g
  • Egg — 1
  • Salt — 1/3 tsp
  • Sugar — 2 tbsp
  • Vanilla — optional
  • Semolina — 3 tbsp
  • Flour — for dusting
  • Vegetable Oil — for frying
  1. Prepare the cottage cheese. It’s best to use medium-fat cottage cheese to ensure the syrniki are soft while maintaining their shape. For a smoother texture, the cottage cheese can be strained through a sieve.
  2. Mix the main ingredients. In a deep bowl, combine the cottage cheese, egg, salt, sugar, and vanilla. Mix thoroughly until uniform.
  3. Add the semolina. Incorporate the semolina into the mixture and let it sit for 15-20 minutes to allow the semolina to swell slightly. This will help the syrniki hold their shape better when frying.
  4. Form the syrniki. Shape the dough into small round or oval patties. Dredge each syrnik in flour on both sides.
  5. Fry the syrniki. Heat vegetable oil in a pan. Place the syrniki in the pan and fry over medium heat until golden brown on both sides, approximately 3-4 minutes per side.
  6. Serving. Serve the syrniki hot. They pair wonderfully with sour cream, honey, jam, or fresh berries.
