Sweet Cheese Rolls Recipe

  • Milk – 200 ml, warm
  • Eggs – 2
  • Active Dry Yeast – 6 g (1 tsp heaped)
  • Sugar – 60 g (3 tbsp)
  • Melted Butter – 50 ml
  • Flour – 450 g
  • Salt – 0.5 tsp
  • Vanillin (or vanilla extract) – to taste
  • Cottage Cheese (Tvorog) – 200 g, strained if too wet
  • Egg – 1
  • Powdered Sugar – 45 g (3 tbsp)
  • Cornstarch – 15 ml (1 tbsp)
  1. Prepare the Dough:
    • Dissolve the yeast and 1 tablespoon of the sugar in the warm milk. Let it sit for 10 minutes until frothy.
    • In a large bowl, combine the yeast mixture, the rest of the sugar, eggs, melted butter, salt, and vanillin.
    • Gradually add the flour, mixing until a soft dough forms. Knead until smooth and elastic.
    • Cover the dough and let it rise in a warm place until doubled in size.
  2. Make the Filling:
    • In a bowl, mix together the cottage cheese, egg, powdered sugar, and cornstarch until well combined.
  3. Form the Rolls:
    • Once the dough has risen, punch it down and divide it into equal portions.
    • Roll each portion into a circle or oval shape.
    • Place a spoonful of the cheese filling in the center of each piece of dough.
    • Fold the dough over the filling and seal the edges, forming the rolls into crescent shapes or pockets.
  4. Bake the Rolls:
    • Preheat your oven to 180°C (356°F).
    • Place the rolls on a baking sheet lined with parchment paper.
    • Let them rest for another 10-15 minutes. Then, if you like, brush the tops with an egg wash for a shiny finish.
    • Bake for 15-20 minutes or until they are golden brown.
  5. Serve:
    • Allow the rolls to cool on a wire rack.
    • Optionally, dust with additional powdered sugar before serving.

These rolls are perfect as a breakfast treat or a sweet snack throughout the day. Enjoy your baking!
