Quick Magic Pie Recipe

  • Lavash (flatbread) – 300 g (about 3 sheets)
  • Cottage cheese (Tvorog) – 300 g
  • Eggs – 3 medium
  • Milk – 250 ml
  • Cheese – 250 g, grated (choose a type that melts well, like cheddar or mozzarella)
  • Salt – 1/4 tsp
  • Butter – 40 g, melted, plus extra for greasing the pan
  1. Preheat Oven:
    • Preheat your oven to 180°C (356°F). Grease a 20-24 cm diameter baking dish with butter.
  2. Prepare the Filling:
    • In a large mixing bowl, whisk together the cottage cheese, eggs, and milk until smooth. Season with salt.
    • Stir in most of the grated cheese, reserving some for topping the pie.
  3. Layer the Pie:
    • Place a sheet of lavash on the bottom of the greased dish.
    • Pour a portion of the cheese and egg mixture over the lavash, spreading it evenly.
    • Repeat the layers until all the lavash and filling are used, finishing with a layer of the mixture.
  4. Top with Cheese and Butter:
    • Sprinkle the remaining grated cheese on top.
    • Drizzle the melted butter over the cheese.
  5. Bake:
    • Bake in the preheated oven for about 30-40 minutes, or until the top is golden brown and the filling is set.
  6. Cool and Serve:
    • Let the pie cool slightly before cutting into squares or wedges.
    • Garnish with fresh herbs like chopped chives or parsley, if desired, just before serving.

This “magic pie” is perfect for when you want something satisfying but don’t have a lot of time to spend in the kitchen. The result is a tasty, layered pie that can be enjoyed hot or cold, making it a versatile dish for any meal or occasion.
