Sweet and Spicy Chicken Stir-Fry
Ingredients:
- 300 g chicken breast
- Salt to taste
- Black pepper to taste
- 1 teaspoon sweet paprika
- 1 tablespoon cornstarch
- 1 onion
- 1 bell pepper
- 1/2 chili pepper (adjust to heat preference)
- 1 clove garlic
- Green onions for garnish
Sauce:
- 3 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon brown sugar
- 2 tablespoons sweet chili sauce
- 1 tablespoon ketchup
Preparation Method:
- Cut the chicken breast into bite-sized pieces. Season with salt, black pepper, and sweet paprika.
- Toss the chicken pieces with cornstarch until they are evenly coated. This will help to thicken the sauce later and give the chicken a nice crust when cooked.
- Peel and slice the onion. Cut the bell pepper into bite-sized pieces. Finely slice the chili pepper and garlic. Chop the green onions for garnish.
- In a bowl, whisk together the ingredients for the sauce: soy sauce, rice vinegar, brown sugar, sweet chili sauce, and ketchup.
- Heat some oil in a pan over medium-high heat. Add the chicken and stir-fry until it’s cooked through and has a slight crispness on the outside.
- Remove the chicken and set aside. In the same pan, add a bit more oil if necessary, and stir-fry the onion, bell pepper, chili pepper, and garlic until the vegetables are just softened.
- Return the chicken to the pan and pour the sauce over the top. Cook for a few more minutes, stirring constantly, until the sauce has thickened and everything is well coated.
- Sprinkle with green onions before serving.
