Baked Chicken Thighs with Herbed Potatoes and Mushrooms
Ingredients:
- 4 chicken thighs
- Salt to taste
- Black pepper to taste
- 1 teaspoon dry garlic powder
- 1 teaspoon sweet paprika
- 2 tablespoons soy sauce
- 20 g butter, melted
- 1 tablespoon ketchup
- 500 g potatoes
- 200 g mushrooms
- Oregano to taste
- Additional dry garlic powder, 1 teaspoon
- Olive oil
Preparation Method:
- Preheat the oven to 190 – 200 °C.
- Clean the chicken thighs and pat them dry with paper towels.
- Season the chicken thighs with salt, black pepper, 1 teaspoon dry garlic powder, and sweet paprika.
- In a small bowl, mix together the soy sauce, melted butter, and ketchup. Brush this mixture over the chicken thighs to coat them thoroughly.
- Wash the potatoes and cut them into wedges or chunks. Place them in a separate bowl.
- Clean the mushrooms and slice them if they are too large; they can be left whole if they are small.
- Season the potatoes and mushrooms with salt, black pepper, oregano, and another teaspoon of dry garlic powder. Drizzle olive oil over them and toss to coat.
- Arrange the chicken thighs in the center of a baking tray.
- Spread the seasoned potatoes and mushrooms around the chicken in the tray.
- Bake in the preheated oven for 40 minutes or until the chicken is fully cooked through and the potatoes are tender and golden.
Serving: Once done, serve hot directly from the tray or on a platter. The chicken should have a nice crispy skin, and the potatoes and mushrooms should be aromatic and flavorful. Enjoy your hearty and delicious meal!
