Simple Stir-Fried Broccoli and Carrots
Ingredients:
- 2 carrots
- 300 g broccoli
- 1 onion
- Vegetable oil
- 1 clove of garlic
- 2 tablespoons soy sauce
- Salt for the blanching water
Preparation Method:
- Peel the carrots and cut them into matchsticks or thin slices.
- Cut the broccoli into florets, and if you like, peel and slice the stems thinly as well.
- Peel and thinly slice the onion.
- Crush or finely mince the garlic.
- Bring a pot of salted water to a boil. Add the carrots and cook for 1 – 2 minutes. Then add the broccoli florets to the boiling water and cook for an additional minute. This process is called blanching and helps to maintain the vibrant color and a bit of crunch in the vegetables.
- Drain the vegetables and immediately rinse them with cold water to stop the cooking process.
- Heat some vegetable oil in a wok or large frying pan over medium-high heat.
- Add the onions and garlic to the pan and stir-fry until the onion is translucent.
- Add the blanched broccoli and carrots to the pan. Stir-fry the mixture for a few minutes until the vegetables are heated through and are cooked to your preferred tenderness.
- Pour the soy sauce over the vegetables and stir to coat evenly. Stir-fry for another minute.
Serving: Serve the stir-fried vegetables immediately as a side dish or over rice for a simple vegetarian meal. Enjoy your tasty and nutritious stir-fry!
