Udon Noodle Okonomiyaki

Servings: 2

  • 200 g udon noodles
  • 20 g green onions, chopped
  • 40 g cabbage, finely chopped
  • 53 g imitation crab meat (about 3 sticks), chopped
  • 2 large eggs
  • 20 g (2 tablespoons) wheat flour
  • 2 pinches of salt
  • Teriyaki sauce
  • Mayonnaise
  • Additional green onions for garnish (optional)
  • Bonito flakes (katsuobushi), optional

Cooking Tips:

  • Other types of noodles such as ramen or pasta can be substituted for udon.
  • Instead of cabbage, other vegetables like enoki mushrooms can be used.
  • If you add more vegetables, consider increasing the number of eggs to bind the ingredients together.
  1. Cook the udon noodles according to the package instructions, then drain and set aside to cool slightly.
  2. In a large bowl, beat the eggs and add the cooked udon noodles, chopped green onions, cabbage, and imitation crab meat. Mix well.
  3. Sprinkle the wheat flour and salt over the mixture and stir until everything is well combined.
  4. Heat a non-stick skillet over medium heat and add a little oil.
  5. Pour half of the batter into the skillet, shaping it into a pancake. Cook until the bottom is golden brown, then flip and cook the other side.
  6. Repeat with the remaining batter for the second serving.
  7. Once cooked, transfer the Okonomiyaki to a plate.

Serving: Drizzle teriyaki sauce and mayonnaise over the top of the Okonomiyaki. Garnish with additional chopped green onions and bonito flakes if desired. Serve hot as a hearty breakfast or a quick dinner option. Enjoy this delicious fusion of flavors in a unique noodle pancake!
