Udon Noodle Okonomiyaki

Ingredients:
- 200 g udon noodles
- 20 g green onions, chopped
- 40 g cabbage, finely chopped
- 53 g imitation crab meat (about 3 sticks), chopped
- 2 large eggs
- 20 g (2 tablespoons) wheat flour
- 2 pinches of salt
Toppings and Sauce:
- Teriyaki sauce
- Mayonnaise
- Additional green onions for garnish (optional)
- Bonito flakes (katsuobushi), optional
Cooking Tips:
- Other types of noodles such as ramen or pasta can be substituted for udon.
- Instead of cabbage, other vegetables like enoki mushrooms can be used.
- If you add more vegetables, consider increasing the number of eggs to bind the ingredients together.
Preparation Method:
- Cook the udon noodles according to the package instructions, then drain and set aside to cool slightly.
- In a large bowl, beat the eggs and add the cooked udon noodles, chopped green onions, cabbage, and imitation crab meat. Mix well.
- Sprinkle the wheat flour and salt over the mixture and stir until everything is well combined.
- Heat a non-stick skillet over medium heat and add a little oil.
- Pour half of the batter into the skillet, shaping it into a pancake. Cook until the bottom is golden brown, then flip and cook the other side.
- Repeat with the remaining batter for the second serving.
- Once cooked, transfer the Okonomiyaki to a plate.
Serving: Drizzle teriyaki sauce and mayonnaise over the top of the Okonomiyaki. Garnish with additional chopped green onions and bonito flakes if desired. Serve hot as a hearty breakfast or a quick dinner option. Enjoy this delicious fusion of flavors in a unique noodle pancake!
