Stir-Fried Glass Noodles with Cabbage

Ingredients:
- 200 g of cabbage (about 1/4 of a small head)
- 153 g of eggs (approximately 3 medium-sized)
- 2 pinches of salt
- 70 g of glass noodles (rice noodles can be substituted; cooking time varies)
- 40 g of green onions, chopped
- Additional chopped green onions for garnish (optional)
Seasoning:
- 40 g (5 tablespoons) of soy sauce
- 24 g (1.5 tablespoons) of honey
- 8 g (1 tablespoon) of sesame oil
- 4 g (1 tablespoon) of toasted sesame seeds
Cooking Tips:
- Cut the glass noodles with scissors after cooking for easier eating (this step was not shown in the video).
- If using rice noodles, soak them in water for 40 minutes, then boil for 2 minutes.
- Cabbage is the main ingredient in this dish, so the amount of noodles should be less than the cabbage. Adjust the ratio of noodles to your preference.
Preparation Method:
- Cook the glass noodles according to the package instructions until soft, then drain and rinse under cold water. Cut them into shorter lengths for easier mixing.
- In a large pan or wok, scramble the eggs with a pinch of salt and set aside.
- In the same pan, heat a little oil and stir-fry the chopped cabbage until it softens. Season with a pinch of salt.
- Combine the soy sauce, honey, and sesame oil in a small bowl to create the sauce.
- Add the cooked noodles and scrambled eggs back into the pan with the cabbage.
- Pour the sauce over the noodles and vegetables, stirring to coat everything evenly.
- Stir-fry for a couple more minutes until all the ingredients are well combined and heated through.
Serving: Serve the stir-fried noodles hot, garnished with toasted sesame seeds and additional green onions. This dish can be enjoyed on its own or as a side with rice for a more filling meal. Enjoy your flavorful and hearty stir-fried glass noodles!
