One-Pot Mexican Fusion Pasta

Servings: 2

  • 16 g (2 tablespoons) of olive oil (for sautéing vegetables)
  • A pinch of salt (for sautéing vegetables)
  • 50 g of red bell pepper
  • 50 g of yellow bell pepper
  • 50 g of onion
  • 100 g of penne pasta
  • 164 g of chicken breast
  • 24 g (3 tablespoons) of olive oil (for frying garlic)
  • 18 g (1 tablespoon) of minced garlic
  • 6 g (1 tablespoon) of chili powder
  • 5 g (1 tablespoon) of cumin powder
  • 300 ml of milk
  • 200 ml of water
  • 50 g of Pepper Jack cheese
  • 5 g (1.5 teaspoons) of salt
  • 1 g (0.3 teaspoon) of ground black pepper

Cooking Tips:

  • Pepper Jack cheese is a spicy cheese variety that includes red pepper and jalapeño.
  • If you prefer more heat, you can add additional chili powder or diced jalapeños.
  1. Heat 16 g (2 tablespoons) of olive oil in a large skillet or pot over medium heat. Add the sliced bell peppers and onions with a pinch of salt and sauté until softened.
  2. Push the vegetables to the side and add the chicken breast to the skillet. Cook until the chicken is browned and cooked through. Remove the chicken and vegetables from the skillet and set them aside.
  3. In the same pot, add 24 g (3 tablespoons) of olive oil and sauté the minced garlic until fragrant.
  4. Stir in the chili powder and cumin, cooking for about 30 seconds to release the flavors.
  5. Pour in the milk and water, and bring to a simmer.
  6. Add the penne pasta to the pot and cook according to package instructions until al dente, stirring occasionally.
  7. Once the pasta is cooked, reduce the heat and stir in the Pepper Jack cheese until melted and smooth.
  8. Season with the remaining salt and black pepper.
  9. Slice the cooked chicken breast and add it back to the pot along with the sautéed vegetables. Stir everything together until the chicken and vegetables are coated with the creamy sauce.

Serving: Serve the pasta hot, garnished with additional chopped green onions or cilantro if desired. This Mexican fusion pasta offers a delightful combination of creamy, cheesy, and spicy flavors, perfect for a comforting meal. Enjoy!
