Korean-Style Kimchi Noodles

Ingredients:
- Noodles of your choice
- 2 packets of radish kimchi soup base
- 6 tablespoons of red kimchi soup seasoning
- 4 tablespoons of finely chopped kimchi
- Cucumber, thinly sliced
- 1 boiled egg, halved
- Cheongyang chili pepper (or any spicy chili pepper), sliced (optional)
For the Kimchi Mix:
- 1 tablespoon sesame oil
- 1 tablespoon sesame seeds
- Red pepper powder (optional)
Preparation:
- Prepare the kimchi soup by mixing 6 tablespoons of the red kimchi soup seasoning with the radish kimchi soup base in a pot. Warm it up over medium heat but do not bring it to a boil.
- Cook the noodles according to the package instructions, then drain and rinse them under cold water to cool them down. This stops the cooking process and keeps the noodles firm.
- In a separate bowl, mix the chopped kimchi with sesame oil, sesame seeds, and a bit of red pepper powder if you like it spicy.
- Place the cooled noodles into serving bowls.
- Pour the prepared kimchi soup over the noodles.
- Top the noodles with the seasoned kimchi, cucumber slices, a slice of the Cheongyang chili pepper if using, and a half of the boiled egg.
Tips:
- The radish kimchi soup base typically has a tangy and slightly sweet flavor which pairs well with the spiciness of the kimchi.
- You can adjust the level of spiciness to your preference by adding more or less red pepper powder or chili pepper.
- Serve immediately to enjoy the refreshing and zesty flavors, perfect for a summer meal.
