Cherry Tomato and Soy Sauce Pasta
Ingredients:
- 20 cherry tomatoes (or as many as you like), halved
- Olive oil (as needed)
- 1 serving of pasta (spaghetti or angel hair would work well)
- Chopped green onions
- Young leafy greens like baby spinach or arugula (optional)
For the Soy Sauce Dressing (measure with a rice spoon for accuracy):
- 2 spoons of soy sauce
- 1.5 spoons of sugar
- 1.5 spoons of vinegar
- 0.8 spoon of minced garlic
- 2 spoons of sesame oil
- 1 spoon of whole sesame seeds
- 1 spoon of ground sesame seeds
- 1 spoon of chopped green onions
Preparation:
- Cook the pasta in a pot of boiling salted water according to package instructions until al dente. Once cooked, drain and rinse under cold water to stop the cooking process.
- In a mixing bowl, whisk together the soy sauce, sugar, vinegar, minced garlic, sesame oil, sesame seeds, and chopped green onions to create the dressing.
- Toss the cooked and cooled pasta with approximately four spoons of the prepared dressing.
- In a separate bowl, combine the halved cherry tomatoes with the remaining dressing and one spoonful of olive oil.
- Mix the tomatoes and the dressed pasta together gently.
- If using, add the leafy greens to the bowl and toss everything to combine.
