Fluffy Cheese Flatbreads with Chicken Tikka Masala
Servings: 2 portions for Chicken Tikka Masala, 5-6 portions for Flatbreads
Chicken Tikka Masala Ingredients:
- 300g chicken breasts, cut into cubes
- 20g unsweetened yogurt
- 4g lemon juice
- 18g minced garlic
- 6g chili powder
- 10g curry powder
- A pinch of ground black pepper
For the Masala Sauce:
- 20g butter
- Half an onion, finely chopped
- 48g tomato paste
- 20g unsweetened yogurt
- 30g heavy cream (or coconut milk)
- 6g chili powder
- 10g curry powder
- 100ml water
For the Flatbreads:
- 500g bread flour (all-purpose can be used)
- 160ml warm milk
- 160ml warm water
- 10g instant yeast
- 10g sugar
- 8g salt
- 18g olive oil
- Mozzarella cheese, shredded
For the Topping:
- Melted unsalted butter or olive oil
- Parsley, finely chopped
Instructions:
- Marinate the Chicken: Combine chicken with yogurt, lemon juice, garlic, chili powder, curry powder, and black pepper. Marinate for at least 30 minutes, or overnight for best results.
- Prepare the Sauce: In a pan, melt the butter and sauté the onions until translucent. Add the tomato paste and cook for a couple of minutes. Stir in the yogurt, cream, chili powder, and curry powder. Add water and simmer until the sauce thickens. Add marinated chicken and cook until done.
- Make the Flatbreads: Mix the bread flour with instant yeast, sugar, and salt. Add warm milk and water to form a dough. Knead until smooth. Let it rise until doubled in size.
- Shape and Cook Flatbreads: Divide the dough into balls. Roll each into a circle, spread with olive oil, sprinkle mozzarella on half of the dough, fold, and seal. Cook in a heated pan until each side is golden brown.
- Assemble and Serve: Slice the flatbreads, open them up, and fill with the chicken tikka masala. Drizzle with melted butter or olive oil and sprinkle with parsley.
Tips:
- Leftover flatbread can be frozen and reheated in the microwave.
- If you prefer individual servings, divide the dough into six equal parts.
- The chicken tikka masala can also be served alongside the flatbreads instead of a filling.
