Puff Pastry Cones with Meringue Cream

For the Pastry Cones (14 pcs, 14 cm cones):

  • Water + Milk – 100 g (mixed together)
  • Sugar – 20 g
  • Salt – 0.5 tsp
  • Fresh Yeast – 12 g (or 4 g of dry yeast)
  • Flour – approximately 300 g
  • Butter – 100 g, softened
  • Egg Yolk – 1, for egg wash
  • Raisins – 50-100 g (optional)

For the Meringue Cream:

  • Egg Whites – 2 (70 g)
  • Vanilla Extract – to taste
  • Sugar – 140 g
  • Water – 45 g
  • Lemon Acid (or cream of tartar) – a pinch

For the Egg Wash:

  • Egg Yolk – 1
  • Milk – 1 tbsp
  1. Prepare the Pastry:
    • Dissolve the yeast in the water and milk mixture. Add sugar and salt.
    • Start adding flour gradually until a dough forms. Knead the dough until smooth and elastic.
    • Incorporate the softened butter into the dough until well combined.
    • Let the dough rise until it doubles in size.
  2. Shape the Cones:
    • After the dough has risen, roll it out and cut it into strips.
    • Wrap each strip around a greased cone mold, starting from the tip and working your way down.
    • Brush with egg wash made from the yolk and milk.
  3. Bake the Cones:
    • Preheat your oven to 190°C (375°F).
    • Place the cones on a baking sheet and bake until golden brown.
    • Once baked, remove from the oven and let them cool before gently removing the molds.
  4. Make the Meringue Cream:
    • In a saucepan, combine the sugar and water and cook to 118°C (244°F) to make a syrup.
    • Whip the egg whites with vanilla and lemon acid until soft peaks form.
    • Gradually pour in the hot syrup while continuing to whip the egg whites until stiff peaks form and the mixture is glossy and cooled.
  5. Fill the Cones:
    • Once the cones are cool, fill them with the meringue cream using a piping bag.
  6. Serve:
    • Optional: Before serving, you may add raisins inside the cones or sprinkle them on top of the cream.
    • Dust with powdered sugar for a festive look.
  7. Enjoy:
