  • 100g pancake mix
  • 80g milk
  • 3 bananas
  • Strawberries, sliced (optional for garnish)
  • Honey (optional for drizzling)
  1. In a bowl, whisk together the pancake mix and milk until you have a smooth batter.
  2. Peel the bananas and slice them into rounds, about 1/4 inch thick.
  3. Preheat a non-stick skillet over medium heat. Lightly grease the pan with a bit of butter or oil.
  4. Dip banana slices into the pancake batter to coat them evenly.
  5. Place the coated banana slices on the skillet, and cook for about 1-2 minutes on each side, or until golden brown and the batter is set.
  6. Carefully flip the mini pancakes once bubbles form on the surface and the edges appear cooked.
  7. Serve the banana mini pancakes on a plate. Optionally, garnish with fresh strawberry slices.
  8. Drizzle with honey for added sweetness, if desired.
  • Make sure the skillet is not too hot; otherwise, the pancakes may burn before the bananas get warm.
  • If the batter thickens as it sits, add a splash more milk to reach the desired consistency.
  • For a twist, you can add a pinch of cinnamon or vanilla extract to the batter for extra flavor.
