  • Vodka or Cognac: 60 ml, to ensure a crisp texture
  • Vegetable Oil: 60 ml, preferably olive oil, for the dough
  • Water: 500 ml, for dough consistency
  • Flour: 800-900g, for a sturdy dough
  • A Pinch of Salt: for a hint of savoriness
  • Vegetable Oil: 1.5 L, for deep frying to perfection

The Secret to the Crispiest Angel Wings:

  1. Dough Making: Combine the 60 ml of oil with vodka or cognac, then blend this mixture into the water. Gradually whisk in the flour, either with a mixer or by hand, to form a firm, tough dough.
  2. Rest and Knead: Cover the dough and set it aside to relax. After a few minutes, knead the dough again and allow it another rest period. This process helps develop the gluten for a crispier texture.
  3. No Extra Flour: The trick is to knead and roll the dough without sprinkling extra flour on your surface. Use a touch of vegetable oil to prevent sticking. This prevents the frying oil from burning and altering the taste of your angel wings.
  4. Shaping the Treats: Divide the rested dough into portions and roll each piece out until it’s incredibly thin, nearly transparent. Slice the dough into ribbons, then into diagonal strips to form diamond shapes. Cut a slit in the center and thread one end through to create the classic twisted shape. Alternatively, roll the strips into spirals to make “roses” or layer three circular cutouts, pinching them in the center to form a flower.
  5. Frying to Perfection: In a large, heavy-bottomed pot, heat the vegetable oil. Deep-fry the angel wings until they achieve a pale golden color. They should be completely submerged in the oil to “boil” rather than fry on a surface.
  6. Finishing Touches: Once they’re just the right shade of yellow, remove the angel wings from the oil, let them drain on paper towels, then transfer to a serving dish and dust with powdered sugar.

Now, your simplest yet most divine angel wings are ready to be enjoyed! These treats offer a delightful crunch that melts in your mouth, leaving a heavenly aftertaste of butter and a subtle sweetness, depending on whether you favor sugar or honey for finishing.
