Ingredients:
- 2 sweet potatoes, medium-sized
- 4 tablespoons of unsalted butter
- 3/4 cup of shredded mozzarella cheese
- 1 tablespoon of honey
Instructions:
- Preheat your oven to 375°F (190°C).
- Wash the sweet potatoes thoroughly and pat them dry. Pierce the skins several times with a fork to allow steam to escape during baking.
- Bake the sweet potatoes in the preheated oven for about 45 minutes to 1 hour, or until they are tender all the way through.

- Remove the sweet potatoes from the oven, and let them cool for a couple of minutes.
- Garnish with a sprinkle of fresh herbs if desired, and serve warm as a delightful side dish or a comforting main.
