Honey Butter Sweet Potatoes

  • 2 sweet potatoes, medium-sized
  • 4 tablespoons of unsalted butter
  • 3/4 cup of shredded mozzarella cheese
  • 1 tablespoon of honey
  1. Preheat your oven to 375°F (190°C).
  2. Wash the sweet potatoes thoroughly and pat them dry. Pierce the skins several times with a fork to allow steam to escape during baking.
  3. Bake the sweet potatoes in the preheated oven for about 45 minutes to 1 hour, or until they are tender all the way through.
  4. Once the sweet potatoes are cooked, remove them from the oven and let them cool slightly. Cut them in half lengthwise.
  5. Scoop out some of the flesh from the center of each sweet potato half, leaving a small border near the skin to ensure the halves hold their shape.
  6. In a small saucepan over low heat, melt the butter and stir in the honey until well combined.
  7. Brush the insides of the sweet potato halves with the honey butter mixture, making sure to cover the surface evenly.
  8. Sprinkle the mozzarella cheese generously over the honey butter layer.
  9. Place the sweet potato halves back into the oven. Switch the oven to broil and broil the sweet potatoes until the cheese is melted and slightly golden, about 2-3 minutes. Keep a close eye on them to prevent burning.
  10. Remove the sweet potatoes from the oven, and let them cool for a couple of minutes.
  11. Garnish with a sprinkle of fresh herbs if desired, and serve warm as a delightful side dish or a comforting main.

  • Any type of sweet potato works for this recipe, whether orange or white fleshed.
  • For an added flavor boost, sprinkle a pinch of cinnamon or nutmeg over the sweet potatoes before adding the cheese.
  • If you prefer a vegan version, use plant-based butter and cheese.
