Miner’s Salad

Miner’s Salad

  • 300 g of boiled meat
  • 300 g of cucumbers
  • 1 red onion (1 tsp salt, 1 tsp sugar, 1 tbsp 6-9% vinegar, boiling water)
  • 1-2 cloves of garlic
  • 50 g of vegetable oil
  • 1 bay leaf
  • 5 black peppercorns
  • Salt to taste
  1. Prepare a quick pickle for the red onion: thinly slice the onion and place it in a bowl. Sprinkle with salt and sugar, then pour the vinegar over it. Add enough boiling water to cover the onions and let it sit for about 10-15 minutes. Afterward, drain the onions and let them cool.
  2. While the onions are pickling, slice the boiled meat into thin strips.
  3. Cut the cucumbers into similar-sized strips as the meat.
  4. For the dressing, combine crushed garlic, vegetable oil, a bay leaf, and black peppercorns in a small bowl. Add salt to your preference and mix well.
  5. In a salad bowl, combine the meat, cucumbers, and pickled red onions.
  6. Pour the dressing over the salad and toss gently to ensure all ingredients are well-coated.
  7. Allow the salad to marinate for a bit before serving for the flavors to meld together.

Serving: The salad can be served as a refreshing appetizer or a light main course, garnished with fresh herbs if desired. Enjoy!
